That's a bird's mouth. Schwarz' blog has a few entries on them in reference
to Chinese workbenches and his recent Roman build. Another v shaped
appliance is the doe's foot, which has had more press.

When not in use it hangs conveniently from a nail on the leg of the bench.
I just knock the wedge in place and hang it as a unit.
